How about a slice of No Guilt, Apple Pie?

It’s so easy to make, even a 15 year old can make it! It has nutritional value so you can feel good about enjoying a slice with whipped cream or a scoop of vanilla bean ice cream and a cup of coconut coffee. Plus, it saves well and tastes even better then next day warmed in the oven.Ā  The best part about this recipe, is that when you eat it you’re not thinking of how many hours on the treadmill it will take to burn it off! Instructions
  1. Preheat oven to 375 degrees. Remove pie crusts from oven so they become room temperature and pliable. Rinse apples & peel. Note: peeling the apples is personal preference as the apple skin is very nutritious. Kids tend to prefer the apples peeled.

  2. Slice apples. Put in bowl.

  3. Squeeze lemon juice and toss gently. In small bowl combine cornstarch, nutmeg, cinnamon, salt. Mix well. Add to apples. Stir to cover and sprinkle pinch of salt. Cover bottom of pie pan with pie crust. Pour in apple mixture. Dot with little butter in random spots of apple mixture.

  4. Cover with 2nd pie crust and seal sides, tucking top crust into bottom. Cut slits into top to let steam escape.

  5. Using bakery brush, spread egg wash onto top crust so that the pie crust browns.

  6. Bake appx. 60 minutes at preheated oven, 375 degrees. Look how flaky and crisp the crust gets. Mmmmm.

  7. Cool and serve with whipped cream šŸ™‚ or a little vanilla bean ice cream. Enjoy!
