Udon Soup | Good Luck Noodle Soup

Hi Fit Moms! This recipe is customizable, you can use any veggies, protein or broth. It only takes 15 minutes! And if you want a variety of veggies and want to save time, buy pre-chopped stir fry veggies! #soeasy

Ingredients:

  • 2 boxes of organic free-range chicken broth or bone broth
  • 1 package udon noodles
  • 1 bunch baby bok choy rinsed
  • Stir fry mix: broccoli, baby kale, carrots, cabbage, pea pods
  • Bean Sprouts
  • 2-3 Tbs. minced Garlic
  • 2 minced green onion
  • 1 carton Shitaki mushrooms sliced
  • 1 tsp. minced ginger
  • 1/4 diced onion
  • 1/4 cup low sodium soy sauce
  • Protein: firm tofu, chicken etc.

Directions:

  • Bring broth, garlic, and onion to boil. Add all other ingredients. Bring to boil and simmer. Serve immediately as soon as veggies are soft but not overcooked.
