Spray crock pot with non stick spray for easy clean up. Put in chicken, pour salsa on top. Add onion, garlic, all spices, bay leaf and corn. Pour in chicken broth. Add drinking water to cover the chicken. Stir. Cover and cook 4-5 hours on high or 7-8 on low. Top with diced avocado, a dollap of Greek Yogurt, handful of fresh organic cilantro and crushed tortilla chips. So simple, healthy and delicious. Aloha!
