Healthy Homemade Fit Mom Granola

Hi Fit Moms! This is a family recipe for homemade granola. My mom used to make this when I was a little girl. I remember the house smelling so good, like oatmeal cookies. Mom would be stirring the granola in the over for hours to make sure all the ingredients were evenly toasted. 

I modified the recipe a bit so it’s lower in sugar and higher in good for your ingredients. Enjoy!


  • 4 cups oats

  • 1 1/2 cups nuts 1: I used almonds

  • 1 1/2 cup nuts 2: I used pumpkin seeds

  • 1/2 tsp. salt

  • 1 tsp. cinnamon

  • 1/2 tsp. nutmeg

  • 1 tsp. pure vanilla extract

  • 1 cup virgin coconut oil

  • 1/2 cup pure organic maple syrup (honey or agave nectar works if you don’t have maple syrup)

  • 1/2 cup “goodies” I used unsweetened coconut flakes, dried cranberries, dark chocolate chips, etc.


Preheat oven to 350. Line rimmed baking sheet with parchment paper.

In large mixing bowl, mix oats, nuts, salt, cinnamon and nutmeg.

In microwave save bowl or measuring cup, warm coconut oil in microwave until liquified. Add  vanilla extract & maple syrup to coconut oil.  Pour into oat mixture. Coat all oats and nuts well with the coconut oil mixture.

Pour onto parchment lined baking sheet in even layer. Bake 20 minutes. Remove from oven and stir so that all oats and nuts get baked evenly.

Bake 20 more minutes. Because every oven is different, try a few oats and nuts. If they are crunchy, add coconut and dried cranberries. Bake 10 more minutes.

Remove from oven and leave out until cool.  Granola will get crisper as it cools 🙂 

Store in airtight containers. I love using mason jars, it stays really crunchy. Makes great gift too!

Enjoy over Greek Yogurt, ice cream, smoothie bowls, as trail mix to go or with plant based milk as cereal!
