PREHEAT OVENT 375 DEGREES

  • 1 1/2 CUPS RAW NUTS (WE USED WALNUTS, PECANS, ALMONDS ALL TURNED OUR GREAT! YOU CAN MIX TOO!)

  • 1 CUPS PITTED DATES

MIX IN FOOD PROCESSOR UNTIL RESEMBLES MEAL

ADD IN:

  • 1 TBS CHIA SEEDS

  • 4 TBS WATER

  • 1 TSP. APPLE CIDER VINEGAR

  • 1 TSP. VANILLA EXTRACT

  • 1/2 TSP. BAKING SODA

  • 1/4 TSP. SALT 

ADD TO FOOD PROCESSOR. MIX, SCRAPING WITH SPATULA IF TOO THICK TO BLEND.

  • ADD 1/2 CUP STEVIA SWEETENED CHOCOLATE CHIPS OR CACOA NIBS

PULSE IN FOOD PROCESSOR WITH OTHER INGREDIENTS

USING COOKIE SCOOP, PUT ON PARCHMENT LINED COOKIE SHEET, SPRINKLE WITH UNSWEETENED COCONUT FLAKES (OPTIONAL BUT SOOOO GOOD) AND PRESS WITH A FORK TO FLATTEN

BAKE 375 DEGREES 12-15 MIN. UNTIL SUNTAN GOLDEN BROWN. TIME DEPENDS UPON YOUR OVEN.

COOL ON WIRE RACK 10 MINUTES.

OR JUST MOVE THE ENTIRE PARCHMENT PAPER WITH COOKIES TO THE RACK TO COOL. THEY ARE NOT AS CRISPY THIS WAY. I’VE MADE IT BOTH WAYS.
