Hi Fit Moms! This is one of the best recipes we’ve ever tried. The cookies taste like the kind from a specialty bakery. The cookies are lightly crisp on the outside, moist and gooey on the inside. We reduced the sugar so they aren’t too sweet and added fiber.
Tip: If you regularly cook & bake healthier foods, you probably have most of the ingredients. If not, we suggest you buy online (see items below) to stock up and save money. Many of the ingredients are 25% of what you would pay at the local store.
Preheat oven to 350 degrees
Put silicone baking liners on 2 baking sheets. In a medium to a large bowl, add sugars & vanilla extract. In a small saucepan, heat coconut oil and butter until melted. Add cacao powder, coconut manna, and coffee grounds. Mix until shiny and smooth. Add to sugar vanilla mixture. Mix. Slowly add soymilk, a little at a time and mix well until smooth and paste-like. Do not over mix.
Combine flour, oats, baking soda, baking powder, salt, and coconut flakes. Mix well.
Add flour mixture to the oil sugar mixture. Mix briefly. Again, do not overmix.
Fold in dark chocolate chips.
Spoon using cookie dough scooper, place onto silicone mat placed on a baking sheet or parchment paper for easy clean-up. They don’t spread out too much so you can place cookie dough fairly close together. sprinkle with flaky sea salt. bake 13 minutes. cool on a rack. store in an airtight container.
